Roasted Garlic Cream Sauce (Vegan and Paleo)


Did anyone else make about a dozen resolutions for the new year, only to crash and burn by January 2nd? This girl did! But if you made any resolutions to eat better, cook at home more, or have more family dinners, I’m about to make it easy for you. This vegan, gluten-free, paleo-friendly roasted garlic cream sauce is as simple and quick as it is tasty. Perfect with pasta or as a base for vegan pizza, it’s your new go-to replacement for alfredo.

1 cup raw, unsalted cashews
1 ½ cups boiling water
2 tsp lemon juice
pinch salt
4 roasted garlic cloves or 1 Tbsp roasted garlic paste
1 raw garlic clove

1. Add the cashews to your blender and carefully pour the boiling water over the top. Let sit for 10 minutes.
2. Add the remaining ingredients to the blender. Blend on high until completely smooth. Taste and add more salt as needed.
3. Add to 8 cups of hot pasta or use as desired.
